Ingredients for 2-4 people

for the noodles

  • 250 g soba noodles
  • 150 g green beans
  • 200 g tofu
  • 2 Tsp black sesame seeds

for the vinaigrette

  • 75 ml balsamico vinegar
  • 25 ml soy sauce
  • 1 green chilli (finely chopped)
  • 2 Tsp honey
  • 1 lime (zest)
  • 1 tsp black pepper
  • 100 ml olive oil
  • 50 ml sesame oil

pour soba noodles into boiling water, cook al dente and immediately rinse with cold water.

blanch green beans in salted water and immediately rinse with iced cold water then cut them lengthwise. cut the tofu into little cubes (about 0.5 cm each)

mix all ingredients for the vinaigrette together. stir in noodles, beans and tofu and leave it for 10 minutes.

serve with some black sesame seeds and cress.
