Ingredients for 4 people

  • 3 cloves garlic, thinly sliced
  • 50 g clarified butter
  • 2 red chillies
  • 8 kaffir lime leaves
  • 2 stalks lemongrass
  • 5 dl chicken stock
  • 2.5 dl white wine
  • lemon zest
  • 1 tsp sugar
  • coriander
  • 1/2 lime juice
  • 500 g clams
  • 500 g mussels

put butter in a large saucepan over medium-high heat. once the butter starts to foam, add garlic, chillies, lemongrass, lemon zest and lime leaves, and fry for about two minutes.

pour in the wine, the stock, sugar and salt and bring to a boil. cook for about 5 minutes. at this point add the clams and the mussels, cover and cook until clams and mussels open up. remove from the heat and add the fresh herbs and lime juice.
