Ingredients for 2 people

  • 2 x 200g salmon (or whatever fish you like)
  • 2 spring onions, chopped
  • 3 Tsp lime juice
  • 2 Tsp fish sauce
  • 1 tsp sugar (palm sugar or brown sugar)
  • 3 cloves of garlic (finely chopped)
  • 3 red hot chillies
  • coriander for garnish

steam the salmon for about 7-9 minutes on a steam rack on low heat using 1 glass of water.

in the meantime prepare all the other ingredients: chop the onion, the chillies, the garlic and coriander, add sugar and then add your liquids: lime juice & fish sauce.

when the fish is cooked place it carefully on a plate keeping the water you used to steam. pour the water (about 1dl) into the ingredients you prepared, give it a little stir, and spoon the sauce over the fish. garnish with some coriander and serve with some rice.
