Ingredients for 2 People

  • 100 g smoked salmon
  • 2 slices of chia seeds bread, toasted
  • 1/2 avocado, thinly sliced
  • 2 poached eggs
  • sprouted onions & red radish sprouts
  • fleur de sel & pepper

gently place about 6 thin slices of avocado on a large plate. cut the toasted bread in half and lay it next to the avocado. cover with 2 slices of smoked salmon and the egg on top. add some salt, pepper and some sprouts.

for the poached egg

add 3 Tsp of white vinegar to a pan of steady simmering water. crack egg individually into a cup. create a gentle whirlpool in the water to help the egg white wrap around the yolk. leave to cook for three minutes and then remove with a slotted spoon to drain on kitchen paper.
