Ingredients for 2 people
- 1 handful of super fresh prawns
- 1 organic lemon (juice & zest)
- 1 Tsp olive oil
- 1 fennel
- 1 filleted orange
- fresh chili
clean your prawns by removing the intestinal track which is placed on the back of the shrimp. take your time to do this as you don't want any bad surprises in this refreshing delicate dish.
place the shrimp, lemon juice and zest into a large bowl, and stir to coat. let stand for about 5 minutes, or until shrimp are opaque. the lemon juice will cook them. mix in the fennel finely sliced, the filleted orange, olive oil, chili and salt until coated with lemon juice. done!
