Ingredients for 4 people

  • 400g organic full fat yogurt
  • 1/3 tsp fleur de sel
  • 1/2 lemon zest
  • 1/3 tsp anise

place apiece of doubled cloth strainer in a colander and place the colander over a deep bowl.

stir the salt, lemon zest and anise into the yoghurt then spoon the yoghurt in the center of a piece of the cloth strainer.

leave it over night to drain. when well drained it will be the consistency of cottage cheese. you can mix in fresh or dried herbs, minced garlic, pepper flakes or any other flavoring you like. 

i love serving it with some olive oil or smoked salmon.
