Ingredients for 2 people

  • 250 g fresh prawns
  • 2 Tsp olive oil (extra vergine)
  • 1 lemon (zest)
  • 1/2 lime (zest)
  • 1 clove garlic
  • fleur de sel
  • white pepper
  • 1 red chilli
  • fresh coriander
  • 125 g venere rice
  • 1/2 lemon juice
  • 1/2 lime juice

cook rice following the instructions on the back of package. just remember not to stir rice throughout cooking as it will make it stodgy. then stir in lemon and lime juice, some chopped coriander and sliced chili.

gently combine olive oil, lemon and lime zest, garlic, salt and pepper to your prawns, give it a little stir and let it stay for about 20 minutes. preheat grill to high and place prawns on it for about 2 minutes for each side.

garnish with fresh coriander and serve on top of rice.
