Ingredients for 2-3 people

  • 2 large aubergines
  • 1 clove of garlic, crashed
  • 2 Tsp of hummus
  • 1 lemon, juice
  • salt & pepper
  • 1 Tsp olive oil
  • 2 Tsp Greek no fat yogurt

preheat the oven to 250°C. 

rub the outside of the aubergines with some olive oil and place them in a roasting pan. leave in the oven for about 20-25 minutes or until the interior of the aubergine has collapsed and it is tender. let cool

peel the aubergine and put the interior in the food processor together with garlic, lemon juice, hummus, yoghurt, olive oil, salt and pepper. mix just enough to combine all ingredients together. check the seasoning and serve in a little bowl.
